Niche: Going Vegan after years of eating take out,
frozen entrees, processed foods and way too many Twizzlers!
Health goal: To reach a healthy weight for my height/age (I’m almost there) and to go totally Vegan by January 2009.
Veggie Nerd's story:
When I was an undergrad, my best friend was a Vegetarian. I
thought it was a pretty cool lifestyle, so I stopped eating meat, too. Once I
hit grad school, I struggled to keep up with the lifestyle because living on
campus my dinner choices were peanut butter and jelly sandwiches, a bowl of
cereal or the salad bar. I finally gave up half way through my program and
started eating meat again.
My weight fluxed for the next five years. In March 2007, I finally had enough! I
started eating healthier, smaller portions and kept track of my food intake. At
the end of December 2007, I reached a 20-pound loss milestone. Shortly there
after, I decided to go back to being a Vegetarian.
What being vegetarian has done for me…

I feel amazing and I’m very close to a healthy
weight (I’m about 10 pounds shy). My ultimate goal is to be totally Vegan by
this time next year. Back when I weighed somewhere in the 170s, high for me, I lived to eat and
couldn’t wait for my next meal. But now I just eat enough to give me plenty of
energy to get me through the day.
A major theme on my blog is not worrying
about the things that I eat. I get this from one of my favorite Bible verses,
Matthew 6:25. I know that I can’t be a perfect Vegan or even a perfect
Vegetarian. I know I’m going to overlook an ingredient or forget to ask for Soy
Milk with my latte sometimes, but that doesn’t really matter. What matters most
is that I am making positive changes to improve my health and my outlook on
life.
What one thing has helped you the most in working towards your health & fitness goal: The vast amount of information about Veganism online and at the library.
What one thing you would like more help with:
Since I don’t know any Vegans, I’d like help on how to be a
smart shopper when it comes to purchasing not only groceries but also household
products, clothing and everyday items that are not made from animal bi-products. Any
tips?
